Vegan food is easy to prepare and even easier to devour. With just a few spices, you can turn regular staples into healthful, flavorful meals that are also cheap to purchase. Here are a few delicious recipe ideas!
Vegan Creamy Pasta with Tabbouleh :
This dish combines a flavorful, cooling salad with a creamy pasta.
For the pasta sauce: 1 sweet potato
3/4 cup nutritional yeast
1/4 tsp onion powder
1/4 tsp garlic powder ( make sure you keep these 2 spices to a minimum)
1/2- 1 cup unsweetened plant milk, depending on your preferred consistency ( almond / soy especially)
Boil 1-2 cups of pasta in water, with a bit of salt. Boil the sweet potato and carrots in a separate pot , and if you don’t have time to wait for the sweet potato to boil, cook it in the microwave for 6 minutes ( just wrap it in a wet paper towel beforehand ). Combine the boiled sweet potato, carrots, nutritional yeast, onion and garlic powder, and unsweetened plant milk. Blend, and adjust the amount of milk depending on the consistency you want. If you want it to be thicker, simply use less plant milk. When the sauce is blended, simply add it into the pasta and mix. Sprinkle some nooch on top for some extra ” cheesy ” flavor.
I bought the tabbouleh pre-made from Trader Joe’s, but you can get it at many other health food stores or make your own. It is composed of finely chopped parsley, mint, lemon, chopped tomato and olive oil. This salad is no romaine lettuce!
- Oil Free Baked Fries with Ketchup
These fries are super, flavorful, and are perfectly complemented with ketchup or any of your favorite vegan dipping sauces. You will be surprised how they taste without all the oil! You can eat in abundance!
You will need :
2 medium organic potatoes ( any brand is find, I am using Trader Joe’s bought Russet potatoes )
Italian spice ( mine has tomato, basil and oregano).
Dipping Sauce of Choice ( ketchup is my favorite!)
Cooking Essentials :
Preheat your Oven to 430 degrees Fahrenheit. Peel the potatoes, and proceed to cut them in half lengthwise. Take the halves and cut into smaller pieces, making long strips. Take finished, cut up potatoes and soak up any extra moisture with a paper towel. This ensures they will crisp rather than steam. Take the curry powder and italian spice, and mix throughout the potatoes, making sure they are evenly coated. Place parchment paper on baking tray, spreading them so none of the pieces are touching. ( if you have few pieces you need to sneak on the tray, no need to worry if you cannot have all the fries separated. Just place them on to the best of your ability ). Put them in the oven, give about 20-25 minutes. If they are appearing to turn a golden brown, they should be done. Serve with your chosen sauce and enjoy

Who doesn’t love a good burrito bowl?!
You will need : Brown Rice
Pico de Gallo
Can of black or pinto beans
Vegan Protein ( tofu, Beyond Meat or Gardein, TVP ( Textured Vegetable Protein)
To make this recipe even easier, find a store that sells microwavable, ready-to-eat brown rice packages. Trader Joe’s is the perfect example. If you can’t find any, boiling your own rice is more affordable than getting the pre-packaged microwavable bags and takes 10 minutes. Then, add all the ingredients on top of the rice, and squeeze on the lemon. Voila! Adjust your own measurements and portions of ingredients, depending on how big you want the bowl to be.
