Vegan Chorizo Tacos

  • 1 tube Soy Chorizo
  • 1/2 can black beans
  • 2/3 cup spinach
  • 1 lime, juiced
  • 11/2 tsp cayenne pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • flour tortillas
  • lettuce, cilantro, onion chopped for garnish

In a medium sized saucepan, combine the chorizo and black beans, and let simmer on medium heat for about five minutes. at this point, add the spinach and spices, and let it cook until the liquid has all cooked off. This should take anywhere from ten to twenty five minutes. Add the lime juice, and cook for three to five more minutes. Remove from the heat, and serve on flour tortillas, Garnish with lettuce, onion, and cilantro to taste.
